Tortellini salad with cocktail sauce

Ingredients for 5 servings:

  • 1 package of tortellini, approx. 500 g, from the refrigerated section
  • 1 red bell pepper
  • 1 bell pepper, orange
  • 1 yellow pepper
  • 1 small can of sweet corn
  • 1 small cucumber(s)
  • 4 eggs, hard-boiled
  • 1 few stalks of parsley
  • 1 bottle of dressing (cocktail), 250 ml

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 2 minutes; Total time approx. 22 minutes

The unusual party guest

Cook the tortellini according to the package directions and then drain well in a colander. Wash the bell peppers and cucumber. Deseed the bell peppers and dice them finely. Peel the cucumber and dice it finely. Chop three of the four eggs. Drain the corn well. Pour the cocktail sauce into a large salad bowl and mix with the egg pieces, corn, and bell peppers. Then stir in the tortellini. To prevent water, add the cucumber last. Garnish the salad with the parsley and the last egg. Tip: The tortellini get a savory flavor when cooked in broth.
