Ingredients for 4 servings:
- 4 rolls, stale
- 2 tbsp semolina
- 200 ml milk, lukewarm
- 4 eggs (separated)
- 1 pinch of salt

Cut the rolls into small cubes and place them in a round microwave dish (approx. 20 cm in diameter). Sprinkle the semolina on top. Separate the eggs and pour the egg yolks along with the lukewarm milk over the rolls. Season with salt (but not too much, as the rolls are already salty). Mix the mixture thoroughly. Then beat the egg whites until stiff peaks form and fold them into the mixture, mixing thoroughly. Then place the dumpling mixture in the microwave on high (at least 700 watts) and let it set for 4 minutes. Check after 4 minutes; if the dumpling mixture has already set, transfer the dumpling to a second bowl and place it in the microwave for another 1-2 minutes. (If the dumpling isn’t firm enough after 4 minutes, simply leave it in the microwave for a few more minutes.) Once ready, serve immediately on a plate and cut into slices. The cooking time varies greatly from microwave to microwave. It’s best to just give it a try. It works really well and makes a quick side dish for roasts, goulash, or schnitzel. If you have any leftovers that you want to use later, it’s best to reheat them over a water bath. Putting them back in the microwave will make the dumplings too hard.
