Ingredients for 4 servings:
- 300 g spelt rice (spelt, milled)
- 2 onions, red
- 300 g beetroot, cooked
- 200 g feta cheese
- ½ cucumber(s)
- 2 tomatoes
- 200 g black olives
- 1 bunch of parsley
- 1 tsp honey
- 3 tbsp vinegar
- 6 tbsp olive oil
- some lemon juice
- some lemon zest
- salt and pepper
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes
with feta and beetroot
Cook the spelt in salted water for 15-20 minutes. Finely chop the vegetables and feta. Mix together a dressing of honey, vinegar, oil, and a little lemon juice and zest, and season with salt and pepper. Toss everything together to make a salad.
