Ingredients for 3 servings:
- 250 g pasta
- 1 large zucchini
- 1 large eggplant(s)
- 3 tomatoes
- n. B. Herbs, Italian style, chopped
- salt and pepper
- 1 bulb(s) garlic (small bulb), peeled
- olive oil
- Balsamic vinegar
- possibly feta cheese
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Cook the pasta according to the package instructions and drain. Meanwhile, finely chop the zucchini, eggplant, garlic bulb, and tomatoes and sauté them in a roasting pan with heated olive oil. Season with salt, pepper, and herbs and cook. Place the pasta in a bowl with the vegetables and mix everything together. Make a salad dressing with salt, pepper, olive oil, balsamic vinegar, and various Italian herbs, according to taste. Mix everything together. The salad can be eaten hot or cold. Tip: You can also add feta cheese, but this will no longer be vegan.
