Smokey's marinated figs on banana foam

Ingredients for 2 servings:

  • 4 figs, ripe
  • 6 tbsp port wine
  • 1 tbsp powdered sugar
  • 1 piece(s) orange(s), only the zest
  • some cinnamon
  • 2 small bananas, ripe
  • 1 tbsp lemon juice
  • 150 ml cream, whipped until stiff
  • 100 g natural yogurt
  • ½ packet of vanilla sugar (bourbon vanilla sugar)
  • 2 tbsp sugar

Instructions

Working time approx. 15 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 15 minutes

Halve the figs and place them in a shallow bowl. Dust with powdered sugar, add the orange zest (reserve a little for decoration), the cinnamon, and the port wine. Cover the bowl and let it marinate in the refrigerator for at least 3 hours. Occasionally drizzle a little of the marinade over the figs. Peel the bananas, cut them into small pieces, and blend them finely with the sugar, vanilla sugar, and lemon juice. Add the yogurt and finally, carefully fold in the cream. Spoon the banana foam into two deep plates and arrange the figs on top. Decorate the figs with some of the banana foam and sprinkle a little orange zest over them.
