Low-fat waffles with plum jam and vanilla ice cream

Ingredients for 1 servings:

  • 250 g flour
  • 1 tsp baking powder
  • 1 pinch of salt
  • 3 tbsp sugar
  • 100 g yogurt, 1.5% fat
  • 3 egg yolks
  • 4 egg whites
  • n. B. Milk, 1.5% fat
  • Butter, for the waffle iron
  • 500 g plums
  • 125 g sugar
  • ¼ packet of citric acid
  • ¼ tsp clove powder
  • ¼ tsp all-spice
  • ¼ tsp cinnamon powder
  • 1 tbsp rum
  • n. B. Ice cream (vanilla), 1 scoop per waffle

Mix the flour with the baking powder, salt, and sugar. Add the whisked yogurt and egg yolk and stir to form a smooth batter. Gradually add the low-fat milk until it forms a thick paste. Let it rest for about 10 minutes, then thoroughly fold in the stiffly beaten egg whites. Grease the preheated waffle iron with a little butter (I only do this for the first waffle; it’s usually enough), add enough batter to just fill the grooves. Close the iron and bake the waffles until golden and crispy. Makes about 6-9 heart-shaped waffles. 24 P in total. For 8 waffles, add 3 P per waffle. Plum jam: Wash the plums, halve them, and remove the stones. Mix with the sugar and spices and let stand in a covered pot for 24 hours. Bring to a boil on high, stirring continuously, and then simmer for about 3 hours. The pot should only be half full. Stir occasionally. Then add the rum and pour into hot, rinsed preserving jars, screw the lids on, and turn upside down for 5 minutes. If you want to make it easier, boil a jar of plums with a little rum, cinnamon, and 1 packet of vanilla sugar until a purée forms. Serve one waffle with plum jam and 1 scoop of vanilla ice cream. Of course, the low-fat waffles don’t taste like waffles made with butter; they have a slightly different consistency and flavor. Nevertheless, this is one of the few diet recipes for desserts that I really like and will continue to make. We always eat it with a little plum jam and 1 scoop of ice cream per waffle. Even this combination, with around 5 points, has significantly fewer calories and fat than a buttery waffle without any toppings, which has around 8 points.
