Mulled wine orange jelly

Ingredients for 1 servings:

  • 500 ml red wine, semi-dry
  • 450 ml orange juice, freshly squeezed
  • 1 lemon(s), untreated
  • 4 cinnamon sticks
  • 4 star anise
  • 8 cloves
  • 300 g gelling sugar 3:1

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 3 minutes; Total time approx. 23 minutes

for 4 glasses of 250 ml each

Wash and dry the lemon, then use a vegetable peeler to remove as thin a peel as possible, leaving no white residue. Place the peel in a saucepan along with the wine and spices, and bring to a boil. Remove from the heat and let it steep for 2 hours. Boil 4 preserving jars (or 250ml twist-off jars) with their lids in boiling water for 3 minutes, then let it dry. Remove the spices from the wine and divide them between the jars. Stir the orange juice and gelling sugar into the wine with a wooden spoon. Bring to a boil and simmer for 3 minutes. Skim off the skims and divide them between the jars. Close the jars and place the lids on for 10 minutes. Turn them upside down and let them cool.
