Green asparagus with feta

Ingredients for 4 servings:

  • 2 bunch asparagus, green
  • n. B. sugar
  • 500 g cherry tomatoes
  • 250 g feta cheese
  • 1 bunch mint, fresh
  • olive oil
  • Balsamic vinegar, white
  • e.g. white bread
  • pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

This great asparagus recipe is prepared in 15 minutes and tastes simply delicious

Cook the asparagus in a large pot of boiling water for about 5 minutes (add 2-3 tablespoons of sugar to the water to draw out the bitterness). Then remove the asparagus from the pot and set aside. Halve the cherry tomatoes and dice the feta. For the marinade, combine olive oil and vinegar. Place a few asparagus spears per person in a medium bowl or deep plate, add the cherry tomatoes and feta (lightly crush a few feta cubes), and pour the marinade over the asparagus. Tear the mint leaves with your hands, scatter them over the dish, and serve with the white bread. This dish is a real hit when the weather gets really hot. 1. It cooks in 15 minutes, and 2. it’s nice and light and tastes really fresh and fruity. My tip: I like to use Moroccan mint, as its flavor isn’t as intense as peppermint. You can now find it in well-stocked nurseries or garden supply stores.
