Green pea puree with melted onions

Ingredients for 4 servings:

  • 250 g peas (shelled peas), green
  • 300 g onion(s)
  • 2 tbsp oil
  • 40 g butter (yogurt butter)
  • Salt
  • pepper
  • nutmeg
  • 600 ml water
  • Grease for the tray

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Boil the peas in 600 ml of water. Simmer over low heat for about 1 hour until soft. Meanwhile, peel the onions, slice or grate into 5 mm thick rings, and mix thoroughly with the oil. Spread out on a greased baking sheet and roast in a preheated oven at 220°C on the second rack from the bottom for about 20 minutes, turning once after 10 minutes. Puree the peas with the cooking water. Reduce to a puree over low heat, stirring occasionally, for about 10-15 minutes. Stir in the butter and season the puree with salt, pepper, and nutmeg. Serve with the puree and the onion rings.
