Ingredients for 1 servings:
- 410 g flour
- 10 g yeast
- 200 ml water
- 2 g sugar
- 6 g salt
- 30 ml olive oil
- 300g mozzarella
- 300 g Brie(s)
- 600 g onion(s)
- 500 g ham
- olive oil

- 1 onion(s)
- 10 green olives
- 10 olives, black
Instructions

Mix 50g flour, 10g yeast, and a little water in a bowl and let it rise for 10 minutes. Then add the remaining flour, salt, a pinch of sugar, and a good spoonful of olive oil and knead. Brush with a little oil and let it rise in a warm place for about 45 minutes. Then knead again, separate 1/3 of the dough, and let it rise again separately from the rest. For the remaining 2/3, grease a bowl with oil, add the dough, brush with oil, and let it rise again. Once most of the dough has risen again, stretch the dough out in the pot, doing this in two steps to give the dough time to relax. Roll out or stretch the dough in a baking pan, forming a small edge, as if baking a pie. Place the sliced ham on the bottom of the dough. Grate the mozzarella and chop the Brie. Spread the grated mozzarella and chopped Brie over the ham. Season everything with oregano, basil, and a little ground black pepper, and drizzle with a little olive oil. Preheat the oven to 230–250°C (top/bottom heat). Roll out the remaining 1/3 of the dough to form a lid that covers the cheese. Spray the lid with a little water, place it on top, and arrange the sliced onion on top. Drizzle with olive oil and garnish with the olives. Place the baking dish either on the floor or in the lower part of the oven for five minutes. Then transfer it to the upper part of the oven, reduce the temperature to around 180°C, and bake for a further 30 to 40 minutes. Tip: Slice the onions 2–3 hours in advance and then refrigerate them with water and ice cubes until needed. This will keep them nice and crispy while baking in the oven.
