Mandarin fruit pudding

Ingredients for 5 servings:

  • 175 g mandarin oranges or clementines, from the can
  • 825 ml tangerine juice or orange juice
  • 100 g cornstarch

Instructions

Working time approx. 15 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 10 minutes; Total time approx. 12 hours 25 minutes

Drain the mandarins, reserving the juice. Add mandarin juice or orange juice from a Tetra Pak, for example, to make 825 ml. Stir the cornstarch into about 0.5 cup of this juice until smooth. Bring the remaining juice to a boil, remove from the heat, and stir in the smooth cornstarch, stirring constantly. At the same time, fold in the mandarin orange segments. Bring back to a boil, stirring constantly (it will stick slightly!), until thickened. Immediately pour into a container rinsed with cold water and let cool. This pudding is easy to turn out; if necessary, run it briefly under hot water.
