Ham rolls filled with vegetables in tomato sauce

Ingredients for 2 servings:

  • 1 shallot(s)
  • 200 g pointed peppers, red
  • 200 g zucchini
  • 200 g potatoes
  • 1 tbsp rapeseed oil
  • salt and pepper
  • Paprika powder
  • oregano
  • 400 g tomatoes, chopped, from the can
  • 4 slices of cooked ham
  • 40 g Gouda, grated

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Wash and trim the vegetables and cut into small cubes. Grate the Gouda cheese. Heat the rapeseed oil in a pan, fry the vegetables, and cook over medium heat for about 10 minutes until al dente. Season well with salt, pepper, paprika, and oregano. Season the chopped tomatoes well with the spices and oregano and place in a baking dish. Preheat the oven to 170 degrees Celsius (convection oven). Center the ham slices with vegetables, roll them up, and add them to the tomato sauce. Arrange the remaining vegetables around them and sprinkle with grated Gouda cheese. Bake in the oven for about 15 minutes. Serve with rice and salad or just baguette.
