Baked pork fillet with tomato and mozzarella

Ingredients for 3 servings:

  • 2 large pork fillets
  • n. B. Spice(s) of your choice, e.g. salt, pepper, paprika
  • 2 large tomatoes
  • 250g mozzarella
  • possibly basil
  • possibly seasoned salt (tomato-mozzarella salt)

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Cut the pork fillet into thumb-thick slices. Press them out slightly with the heel of your hand to flatten or spread them out. Season to taste, e.g., with salt, pepper, paprika, or barbecue seasoning. Briefly and briskly sear both sides in a pan, then set aside. Slice the tomatoes and mozzarella. Place the meat on a baking tray and then spread the tomatoes and mozzarella on top. Place the baking tray in the oven at 180°C (top/bottom heat) until the mozzarella has melted to your liking. This takes about 10-15 minutes. If desired, sprinkle basil and tomato-mozzarella salt or herbs on top before serving. A fresh salad or other side dish of your choice goes very well with this dish.
