Chicken breast fillet with broccoli in cream sauce in the OptiGrill XL baking tray

Ingredients for 3 servings:

  • 500 g chicken breast fillet(s)
  • 350 ml cream, reduced fat
  • 2 tbsp tomato paste
  • 300 g broccoli, fresh or frozen
  • 100 g cherry tomatoes
  • some cheese, grated
  • 1 tsp spice paste (vegetable seasoning paste), homemade
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp sweet paprika powder
  • 1 tsp Italian herbs, frozen
  • 2 garlic cloves
  • some olive oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

In a bowl, whisk together the cream, tomato paste, crushed garlic, and spices and herbs. Pour this sauce into the grill’s baking tray. Rub the chicken breast fillets with a little olive oil, salt, pepper, and paprika and place them on top of the sauce. Place the broccoli florets and cherry tomatoes between the meat in the sauce. Close the lid and set the OptiGrill to “Manual at Orange setting, 220°C” for 20 minutes. After 20 minutes, sprinkle some grated cheese on the chicken breast fillets and bake for another 5 minutes. If the meat is too high, you can place a spacer between the baking tray and the lid.
