Panna cotta with mulled wine

Ingredients for 6 servings:

  • 800 ml cream
  • 1 vanilla pod(s)
  • 1 sachet of agartine (equivalent to 6 sheets of gelatin)
  • 80 g sugar
  • 300 ml mulled wine
  • 50 ml orange juice
  • 1 packet of vanilla sugar
  • 250 g gelling sugar 3:1

Instructions

Working time approx. 10 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 18 minutes; Total time approx. 3 hours 28 minutes

Important: Start preparing 3-4 hours before serving. Pour the cream into a saucepan, scrape out the vanilla pod, and add it. Add the sugar. Bring the mixture to a boil and simmer for 15 minutes. About 2 minutes before the end of the cooking time, add the agartine (adjust according to the package instructions if necessary). Then pour the cream mixture into small molds and let it cool in the refrigerator. Shortly before serving, put the mulled wine, orange juice, vanilla sugar, and gelling sugar in a saucepan and bring to a boil. Let it boil briskly for about two to three minutes. Now, using a ladle, pour the liquid as evenly as possible onto a (flat) plate, ensuring the base is completely covered. Adjust the height to your liking. This should be done relatively quickly, as the liquid sets quickly. Let the mulled wine cool for a few minutes, then turn the panna cotta out onto it. This works best if you dip a knife in warm water first and then loosen the panna cotta from the edge.
