Horseradish and cheese schnitzel

Ingredients for 2 servings:

  • 2 schnitzels
  • salt and pepper
  • Paprika powder, sweet
  • possibly flour
  • 1 egg(s)
  • e.g. breadcrumbs
  • 2 tbsp, heaped creamed horseradish
  • 2 tbsp, heaped Gouda, grated
  • Fat for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Season the schnitzels with salt, pepper, and paprika powder if desired. Coat them first in flour (optional, can be omitted), then in beaten egg, and finally in breadcrumbs. Mix the creamed horseradish and cheese well in a bowl. Fry the schnitzels in the pan as usual. Once they are cooked through, remove them from the pan and spread them thickly with the horseradish-cheese mixture. Depending on your taste, the mixture can be about half a finger thick. Bake the schnitzels in the oven at around 100°C. This works best if you also turn on the grill function. When the schnitzels have reached the desired degree of browning, remove them from the oven and enjoy. Anything that goes well with schnitzel goes well with it: salad, fries, potato salad, etc. Tip: I like to sprinkle smoked paprika powder over the schnitzels before baking. This gives them an additional subtle smoky note.
