Salted Caramel Daim Cookies

Ingredients for 1 servings:

  • 100 g butter or margarine
  • 85 g sugar, brown or cane sugar
  • 1 egg(s), size M
  • 200 g flour
  • ½ tsp baking soda or baking powder
  • 2 tsp spice mix (salted caramel spice)
  • 10 small chocolate bars (Daim Minis)
  • some vanilla extract

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Beat the sugar, butter, egg, and vanilla extract with a hand mixer on high speed until fluffy. Combine the flour with the baking soda and salted caramel spice and stir well into the egg mixture with a wooden spoon. Finally, add the not-too-finely chopped Daim to the batter, ensuring everything is evenly distributed. Preheat the oven to 180°C (top/bottom heat). Meanwhile, with wet hands, form the dough into small balls and place them on a baking sheet lined with baking paper, leaving enough space between them. Bake in the preheated oven on the middle rack for about 18 minutes. Let the cookies cool completely on a wire rack.
