Ingredients for 4 servings:

  • 1 bell pepper(s), red
  • 1 onion(s), red
  • 2 garlic cloves
  • 400 g tomatoes, chopped
  • 2 tbsp tomato paste
  • 150 ml Metaxa
  • 100 g sour cream
  • 100 ml cooking cream
  • 1 salt and pepper
  • 1 tsp olive oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Dice the bell pepper and onion and sauté in oil. Add the crushed garlic cloves and sauté briefly. Pour the tomato paste onto the base and sauté briefly. Stir and season with salt and pepper. Add the chopped tomatoes, stir well, and let it reduce slightly. Add the Metaxa, stir, and simmer for 15-20 minutes over medium heat. Then purée the sauce thoroughly with a hand blender. Stir in the sour cream and cooking cream, and continue simmering until the desired consistency is reached.
