Ingredients for 1 servings:
- 1 monkfish cheek
- 15 small vine tomatoes
- 10 black olives, pitted
- 1 clove(s) garlic
- 1 spring onion(s)
- 2 tbsp olive oil
- 1 tbsp olive oil (e.g. Robusta) for drizzling
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes
Quarter the tomatoes. Finely chop the garlic, olives, and onion. Heat 2 tablespoons of olive oil in a pan and sauté the vegetables. Remove the vegetables and keep warm. Then, sear the fish on both sides in the pan. Add the fish to the vegetables and drizzle with 1 tablespoon of olive oil.
