Ingredients for 3 servings:

  • 170 g plain wheat flour
  • 170 g flour (strong wheat flour)
  • ¼ liter of water
  • 1 tbsp butter
  • 3 eggs
  • 1 bunch chives, chopped
  • Salt

Mix flour, water, and salt to make a thick batter and let it rest for a short while. Pour the batter through a spaetzle sieve into boiling salted water. Cook the spaetzle for 2 minutes, until they rise to the surface; then they are done. Remove the spaetzle, rinse with water, and let it drain. Whisk the eggs with a little salt. Heat butter in a pan and add the spaetzle. Then pour the eggs over the batter. First, let the eggs set a little, then stir well (so that all the spaetzle get some of the egg). Finally, sprinkle chopped chives on top. Serve with salad as a side dish. Tip: Spinach also goes very well with the batter. Just use a little less water, otherwise the batter will be too runny.
