Ingredients for 4 servings:
- 500g spaghetti
- 12 slice(s) smoked streaky bacon
- 1 bunch of spring onions
- 3 tomatoes
- 4 eggs
- 100 g cream cheese
- Salt and pepper from the mill
- 2 tsp parsley, dried or fresh
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes
Cook the spaghetti according to the package instructions, drain well and set aside. Dice the bacon and slice the spring onions into thin rings. Set aside a good handful of spring onions. Cut the tomatoes into small pieces. Mix the eggs with the cream cheese and season with salt and ground pepper. Fry the bacon in a pan, add the spring onions and fry for about 3-4 minutes while stirring, then gradually add the tomatoes and fry briefly until they are soft. Add the spaghetti to the pan and stir well. Remove the pan from the heat and pour the egg mixture over it, mixing well. The egg mixture will coat the spaghetti and then set. Sprinkle the remaining spring onions and the parsley over the spaghetti. Next time I will cut the spaghetti into thirds, as it is easier to mix this way. The spaghetti pan also tastes great cold.
