Bini's apricot and grape jam with rum

Ingredients for 1 servings:

  • 490 g apricot(s), pitted
  • 110 g green, seedless grapes
  • 100 ml black rum
  • 8 g Bourbon vanilla flavor, organic
  • 1 lemon(s)
  • 180 g gelling sugar 3 plus 1

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Wash, pit, and weigh the apricots. Wash the grapes, remove the stems, and weigh them. Place the fruit in a blender along with the rum, lemon juice, and bourbon vanilla sugar. Blend on high for 2 minutes. Pour this fruit mixture into a saucepan and stir in the gelling sugar. Bring to a boil while stirring, then simmer for 4 to 5 minutes, stirring occasionally. Immediately pour the hot mixture into jars and seal them immediately. Turn the jars upside down with the lids facing down and let them cool. Note: This jam tastes very different depending on the rum used. It’s best not to use the cheapest rum. In my opinion, black rum tastes best. If black rum is too expensive for you, you can use Strohrum as an alternative. It’s not bad in terms of taste either.
