Ingredients for 2 servings:

  • 4 matjes fillet(s), double, if possible the original Dutch
  • 1 m.-sized apple
  • 1 m.-sized onion(s)
  • 10 gherkins
  • 1 bunch of dill
  • 1 cup of sweet cream
  • salt and pepper
  • Sugar
  • Coriander powder
  • Pepper, white
  • Cucumber juice

Cut the herring into bite-sized pieces, finely dice the apple and onion, thinly slice the cucumber, finely chop the dill, and place everything in a bowl. Mix the sweet cream with a little cucumber juice, season with pepper, salt, and a few twists of coriander. Add the herring and the remaining ingredients to the bowl and mix well. The herring stew can sit overnight, but should be left to marinate for at least two to three hours. It tastes wonderful with new boiled potatoes. Two of us can (almost) manage this amount. I dice one or two boiled potatoes into the small amount that’s left over, making a little herring salad.
