Pork medallions with feta

Ingredients for 4 servings:

  • 500 g pork fillet(s)
  • 200 g feta cheese
  • 200 ml cream
  • 250 g mushrooms, fresh
  • 1 can cherry tomatoes or peeled tomatoes
  • 1 onion(s)
  • 1 garlic clove(s)
  • salt and pepper
  • Thyme
  • rosemary
  • Fat for the mold

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Pork fillet in tomato sauce topped with feta

Cut the fillet into medallions. Season with salt and pepper, and sear for 2 minutes on each side. Place in a greased baking dish and set aside. Add the cherry tomatoes to a saucepan and simmer. Season with salt and pepper. Chop the garlic clove and add it to the sauce. Then add the cream. Bring back to a boil. Slice the mushrooms and slice the onion. Sear both together. Place the mushroom and onion mixture on the pork fillets and pour the sauce over them. Sprinkle with thyme and rosemary. Finally, crumble the feta cheese over the dish and bake in the oven at 200°C (top/bottom heat) for 20-30 minutes. Tagliatelle goes well with this dish.
