Lemon cake with orange glaze

Ingredients for 1 servings:

  • 3 eggs
  • 130 g sugar
  • 130 g margarine or butter
  • 130 g spelt flour
  • 1 packet of vanilla sugar
  • 1 tsp baking powder
  • 1 sachet of lemon peel flavoring or 0.5 lemon, the juice
  • 1 pack of powdered sugar, 150 g each
  • ½ orange(s), the juice

Instructions

Working time approx. 15 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 25 minutes; Total time approx. 3 hours 40 minutes

with spelt flour, in a 16cm tin

You’ll also need a 16 cm springform pan. Preheat the oven to 175°C (top/bottom heat). Beat the eggs and sugar until fluffy. Gradually add the butter, vanilla sugar, lemon zest flavoring, flour, and baking powder and beat well. Grease the springform pan well or line it with baking paper. Pour the batter into the pan, place it in the preheated oven, and bake on the middle rack for about 25 minutes. To check the doneness, insert a skewer into the pan. Once the cake has cooled completely, mix the powdered sugar with the orange juice and brush it over the cake.
