Cucumber jam with vanilla

Ingredients for 1 servings:

  • 500 g cucumber(s)
  • 1 tbsp vanilla paste
  • 1 tbsp lemon juice
  • 250 g gelling sugar 2:1

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

A slightly different jam

Grate the prepared cucumber very finely using a food processor. Mix with vanilla paste and gelling sugar. Cook for 4 or 5 minutes according to the sugar package instructions. Pour into hot, rinsed jars and seal with boiled lids. Tip: If you’re using some of the gelling sugar, mix it thoroughly in a container first.
