Grilled pork loin

Ingredients for 3 servings:

  • 1 tbsp oil
  • 1 cup(s) onion(s), diced
  • 5 tbsp sugar
  • ½ cup(s) red wine
  • ¾ cup(s) soy sauce
  • ¼ cup(s) balsamic vinegar
  • ½ tbsp ginger, finely chopped
  • ½ tsp black pepper, coarsely ground
  • 3 peaches
  • 1 pork loin(s), as large as possible
  • 2 bags of rice

Instructions

Working time approx. 40 minutes; Rest time approx. 6 hours; Total time approx. 6 hours 40 minutes

with brilliant marinade/sauce

Heat the oil in a pan and sauté the onions and sugar for about 6 minutes. Add the wine, soy sauce, vinegar, ginger, and pepper and bring to a boil, then remove from the heat and let cool completely. Place the pork loin in a plastic bag and pour about a cup of the sauce over one loin. Seal and refrigerate for at least 6 hours (or overnight), turning the meat several times if necessary. Prepare the grill (alternatively, grill in the stovetop or grill pan). Remove the loins from the marinade and discard the marinade. Grill the meat for about 35 minutes. Peel the peaches, blanch them in boiling water for about a minute, and then dice them. Meanwhile, bring the remaining sauce to a boil, reduce by about half, and then add the diced peaches. Bring back to a boil. Cook the rice and serve with the grilled loin and the sauce.
