Coconut-Lemon Cakes

Ingredients for 1 servings:

  • 2 lemons
  • 125 g coconut oil
  • 125 g sugar
  • 2 eggs
  • 100 g flour
  • 1 tsp baking powder
  • 3 drops of vanilla extract
  • Powdered sugar (icing sugar)
  • Sugar sprinkles, optional

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Preheat the oven to 200°C (top/bottom heat). Squeeze the lemon and mix half of the juice with the coconut oil, eggs, vanilla extract, and sugar. Then add the flour and baking powder and stir until all ingredients are well blended. Transfer the mixture to muffin cups or silicone baking trays. Bake for 20 minutes. For the glaze, mix the powdered sugar with enough of the remaining lemon juice to form a nice glaze. Let the cakes cool briefly and then glaze. Optionally, you can decorate the cakes with sugar sprinkles.
