Spaghetti with Avocado Sauce

The perfect spaghetti with avocado sauce recipe with a picture and simple step-by-step instructions.

  • 200 g Spaghetti
  • 1 Avocado
  • 1 Clove of garlic
  • 0,5 Lime fruit juice
  • Fresh basil
  • 20 g Parmesan
  • 1 Egg
  • Salt pepper
  • 125 ml Pasta water
  1. First bring a large saucepan with enough water to a boil. When the water is boiling, salt it well and add the pasta. And stir again and again while the noodles cook. Please refer to the instructions on the package for the cooking time of the pasta.
  2. Now place the bacon in a cold pan and slowly fry it over medium heat until it is crispy. Then drain the bacon on paper towels.
  3. Now halve the avocado, remove the stone and lift the pulp out of the skin with a spoon. Peel and slice the garlic. Pluck the leaves from the basil. Grate the Parmesan and remove 120 ml of pasta water.
  4. Put the avocado, garlic, basil, juice of half a lime, 1 egg yolk, salt, pepper and 125 ml of pasta water in a container and mix or puree. If you don’t have fresh basil in the house, you can also take basil pesto.
  5. Drain the pasta and put it in a large pan where the ham has been fried. Turn off the stove, mix the avocado sauce with the pasta and stir in some of the crumbled crispy bacon.
  6. Arrange on plates, sprinkle the remaining crumbled bacon over the pasta and serve.
