Ingredients for 4 servings:
- 100g quinoa
- some olive oil for frying
- 1 bunch of spring onions
- 2 bell peppers
- 1 zucchini
- 100 g mushrooms
- 1 cup cottage cheese
- 100 g mozzarella, grated
- 200 g cocktail tomatoes
- n. B. white wine
- Garlic
- salt and pepper
- basil
- chili powder
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes
Halve the cherry tomatoes and set aside. Slice the spring onions, zucchini, and mushrooms and sauté in a little olive oil. Dice the bell peppers and add them. Rinse the quinoa and add it as well. Sauté everything for about 5 minutes until nicely browned. Deglaze with white wine and/or water and simmer until the quinoa is tender (about 20 minutes, depending on the brand). Then stir in the cottage cheese and mozzarella and season with salt, pepper, and other spices (basil and chili work well). Serve on plates with the cherry tomatoes. I can also imagine other vegetables and even some chicken with this.
