Banana and Peanut Bread

The perfect banana and peanut bread recipe with a picture and simple step-by-step instructions.

  • 3 piece Ripe bananas
  • 30 g Peanut butter / butter
  • 4 piece Organic eggs
  • 60 g Coconut flour
  • 40 g Ground hazelnuts
  • 2 tbsp Melted coconut oil
  • 1 tsp Baking powder
  • A pinch of salt
  1. Briefly in advance: This is not a classic bread, but a kind of cake. So please do not top it with ham :-). Preheat the oven to 180 degrees top / bottom heat. Puree the bananas with the peanut butter. Beat the eggs in a mixing bowl until frothy. Add the puree, coconut flour, hazelnuts, coconut oil, baking powder and salt, work into a dough.
  2. The dough can be poured into a large loaf pan. Alternatively: I have small wooden molds that are suitable for baking bread. You can use it a few times. I line them with baking paper, fill in the dough and decorate the surface with the 4th ripe banana (see photo). You can also give it away very nicely in these wooden molds.
  3. The bread should be baked after about 30 minutes. Please do the chopsticks test. You can also enjoy it warm, for example with some jam, or just plain. The peanut butter ensures that the banana is not too dominant.
