Banana Chocolate Bread

Ingredients
 

  • 3 Bananas
  • 150 g Dark chocolate 70%
  • 125 g Light muscovado sugar
  • 1 pinch Salt
  • 1 tsp Ground Tahitian vanilla powder
  • 1 Quarter teaspoon ginger powder
  • 125 g Salted butter soft
  • 2 Eggs lightly beaten
  • 1 Large bowl
  • 200 g Flour
  • 1 pinch Salt
  • 1 Knife-Edge baking powder

Instructions
 

  • Preheat the oven to 180 degrees, butter and flour the cake form, and cover the bottom of the form with baking paper. Mix the flour with salt and baking powder and set aside.
  • Mix the butter with the sugar until soft.
  • Break the chocolate into pieces and slowly melt it over a water bath that is not too hot. And let it cool slightly.
  • Mix the eggs gently and stir vigorously into the butter-sugar mixture. Mash the bananas in a plate with a fork.
  • Add the melted chocolate, banana puree, spices and mix well with the flour! Caution with a wooden spoon not with the hand mixer !!!
  • Pour into the mold and bake in the oven for 50 minutes! Let cool on a wire rack.
