Caribbean chicken breast fillet with mango and apple sauce

Ingredients for 4 servings:

  • 4 chicken breast fillets
  • 1 mango(s)
  • 1 apple
  • 200 ml orange juice, more if needed
  • 3 tbsp vinegar
  • e.g. ginger, ground or as a paste
  • 1 pinch(s) of pepper
  • 6 tbsp olive oil
  • 1 chili pepper(s), red
  • 3 tbsp soy sauce
  • Paprika powder
  • Curry powder, hot
  • 1 dashes lemon juice
  • 1 tsp all-spice
  • 1 pinch(s) cinnamon powder
  • 3 tsp sugar

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 10 minutes

For the marinade, mix olive oil with pepper, curry powder, soy sauce, and allspice until smooth and brush the chicken breasts with it. For the mango sauce, cut the mango and apple into small pieces. Finely slice the chili pepper. Mix the orange juice, ginger, lemon juice, chili, sugar, and cinnamon with the fruit in a saucepan and season to taste. Bake the chicken breasts for about 50 minutes in an unheated oven (e.g., in an uncovered casserole dish) at 170°C. Place a cup or small casserole dish filled with water in the oven to prevent the chicken breasts from drying out too quickly. Turn the breasts twice during cooking, brushing them again with the marinade. Bring the fruit sauce to a boil until the orange juice has reduced. Add a little more orange juice, if desired. Basmati or wild rice goes well with this dish.
