Ingredients for 4 servings:
- 2 zucchinis
- 60 g sausage (chorizo)
- 40 g mushrooms
- 40 g oyster mushrooms
- 50 g red onion(s)
- 1 pinch of salt
- 1 pinch(s) of pepper
- 30 ml olive oil
- 60 g herb butter
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes
Cut the zucchini into 4 cm thick slices, hollow out half of the skin, and blanch. Dice the chorizo, onions, and mushrooms. Sauté the onions in olive oil, add the chorizo, add the mushrooms, season with salt and pepper, stuff the zucchini with the slices, spread a little herb butter on top, and briefly gratinate under a salamander or in the oven with top heat.
