Ingredients for 4 servings:
- 700 g raw smoked pork, boneless
- 2 glasses of dry white wine
- 2 bell peppers, colored
- 1 onion(s)
- 1 stalk(s) leek
- 200 g mushrooms, fresh or from the can
- 1 tbsp butter
- ½ tube(s) tomato paste
- e.g. salt and pepper
- e.g. marjoram and basil
- 100 g cheese (Emmental), grated
- 2 tbsp flour
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Sauté the meat in white wine (do not boil, or it will dry out). Test the meat with a skewer to see if it’s cooked. Let it cool slightly. This will take about 20-40 minutes, depending on the thickness. Reserve the wine. Wash the vegetables. Cut the bell pepper into strips and the leek into rings. Chop the onion. Sauté in butter with the halved mushrooms. Dust with flour and deglaze with the wine. Stir in the tomato paste. Cook for 10 minutes, season with salt, pepper, and spices. Slice the meat, place it in a baking dish, and cover with the vegetables. Sprinkle with the cheese and bake at 250°C (200°C fan-assisted oven) until the cheese is golden brown. Serve with rice and white wine.
