Separate the egg. Brush a nonstick frying pan lightly with oil and heat over medium heat. Add the egg white to the pan and swirl it around to spread it evenly. Once the egg white has set slightly, season with herb salt and place the yolk in the center. Carefully fold the right and left sides of the egg white over the yolk and repeat with the top and bottom sides. You can flip the resulting parcel and cook it on the other side; I found that too risky. Arrange the egg white parcel on a plate, garnish with chives, and serve.
