Scrambled eggs in Slovak style

Ingredients for 4 servings:

  • 300 g sausages (cooked sausage with garlic)
  • 1 large onion(s)
  • 1 large bell pepper(s), green
  • 3 tomatoes, firm
  • 3 garlic cloves
  • 6 large eggs
  • 30 g margarine for frying
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Melt the margarine in a wok. Slice the sausage and fry briefly. Dice the onion and add it. Stir everything together. Deseed and slice the bell pepper, then add it. Stir everything together again. Wash and chop the tomatoes and add them. Peel and press the garlic cloves and add them. Stir everything together. Season the mixture lightly with salt and pepper and let it simmer for a while. Add the eggs, adding a little more salt if necessary, and stir constantly until the eggs set. Serve hot. Tastes best with spicy brown bread, such as caraway bread.
