Ingredients for 2 servings:
- 2 pork schnitzels
- 50 g almond(s), ground
- 1 egg(s)
- Salt and pepper from the mill
- 1 lemon(s), untreated
- 1 tbsp parsley, finely chopped
- 2 tbsp sunflower oil or coconut oil

Working time approx. 10 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 14 minutes
Pound the pork schnitzels until thin. Grate the lemon zest. Combine the ground almonds, lemon zest, and parsley in a deep plate. Whisk the egg in a second deep plate. Season the schnitzels with salt and pepper and dip them in the egg mixture, then coat them in the breading. Fry in hot oil in a pan for about 2 minutes on each side. Enjoy drizzled with lemon juice.
