Wash the soup vegetables, peel the celery, parsley root, and carrot, roughly dice them, and add them to the blender. Trim and wash the leek, dry thoroughly with kitchen paper, and cut into approximately 3 cm pieces. Rinse the parsley, shake dry, and add it to the blender along with the leek. Add the sun-dried tomatoes, dried porcini mushrooms, chili pepper, and sea salt to the blender and chop for 40 seconds/speed setting 8. Pour into clean screw-top jars and store in the refrigerator. The seasoning mix will keep for about six months when refrigerated and sealed. Replace 2 teaspoons of vegetable seasoning mix with 1 vegetable stock cube.
