Pizza potatoes

Ingredients for 4 servings:

  • 8 m.-sized potatoes, firm or mostly firm cooking
  • 1 can of pizza tomatoes
  • 150g mozzarella
  • n. B. olives
  • 80 g ham or salami, diced
  • 80 g cheese, grated
  • 1 sprig(s) rosemary
  • 1 tsp, heaped pizza seasoning
  • e.g. salt and pepper

Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes

Simply brush the potatoes and then boil them unpeeled for about 15 minutes until soft. Then drain and let cool slightly. In the meantime, pour the pizza tomatoes into a pan, season generously with pepper and salt, and add a heaped teaspoon of pizza seasoning. Stir everything together and simmer on medium heat for about 10 minutes until a thick mixture has formed. Slice the mozzarella and olives. Now halve the potatoes lengthwise with a sharp knife and place them cut-side up on a baking sheet lined with baking paper. Optionally, sprinkle with a little salt. Now spread a generous amount of the tomato mixture over the cut surfaces. Then place the mozzarella slices on top, along with the diced ham and sliced ​​olives. Finally, sprinkle everything with the grated cheese. For additional flavor, place the rosemary sprig on the baking sheet. Now bake the potatoes at 200°C top/bottom heat (180°C fan oven) for approximately 12-15 minutes. Sprinkle some freshly ground pepper on the baked potatoes and serve.
