Ingredients for 4 servings:
- 2 packs of glass noodles
- 300 g chicken breast fillet(s)
- 3 red bell peppers
- 2 onions
- 1 package of mushrooms, fresh
- 1 small eggplant(s)
- 5 carrots
- 3 garlic cloves
- 2 tbsp ajvar
- 1 pinch(s) of salt and pepper
- oil
Instructions
Working time approx. 20 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 15 minutes; Total time approx. 2 hours 35 minutes

Prepare the glass noodles according to the package instructions. Peel and grate the carrots. Finely chop the bell peppers, onions, mushrooms, and eggplant and fry briefly in a little oil in a pan. Place the noodles in a bowl and press in the peeled garlic. Add the fried vegetables and carrots, mix with the noodles, and season with ajvar, salt, and pepper. Cut the chicken into strips, season with salt and pepper, fry briefly in a little oil, and add to the salad. Enjoy cold or warm. Tip: The salad is also delicious without meat.
