Pasta salad with mandarins and eggs

Ingredients for 4 servings:

  • 500 g pasta (spaghetti or shell pasta)
  • 1 small can/mandarin orange(s)
  • 1 small can of peas
  • 4 eggs
  • 250 g Miracle Whip
  • salt and pepper
  • curry powder

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Mother’s pasta salad

Cook the pasta in salted water according to the package instructions. Drain and let cool. Boil the eggs for about 10 minutes and let cool. Peel and cut into small pieces (e.g., cubes). Drain the pea liquid. Drain the mandarins as well, reserving the mandarin orange juice in a glass. Combine the pasta, peas, mandarin oranges, and eggs in a bowl and stir. Make a sauce with Miracle Whip, salt, pepper, curry powder, and mandarin orange juice. Finally, toss the dressing into the salad and season to taste.
