Ingredients for 4 servings:
- 200g penne
- 1 bell pepper
- ½ cucumber(s)
- e.g. parsley
- e.g. mint
- ½ lemon(s)
- ½ can corn
- 1 small can of peas and carrots or half a large can
- 1 tomato(s)
- e.g. feta cheese
- Salt
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes
simple, vegetarian, perfect for work
Cook the pasta in salted water until al dente, or until tender. Dice the vegetables, herbs, and feta and place in a bowl. Add the corn, peas, and carrots to the fresh vegetables. Rinse the cooked pasta in cold water and add it to the rest of the pasta in the bowl. Mix everything together with a spoon. Now squeeze the lemon and add the juice. Tip: You can use a dressing or something similar, if you like, but I find it nice and refreshing with the lemon and mint. Perfect for the office, to go, or in the summer.
