Ingredients for 4 servings:
- 250 g fresh tortellini (with cheese or spinach and ricotta filling)
- salt water
- 200 g cherry tomatoes
- 1 m.-sized cucumber(s)
- 1 large bell pepper(s)
- 3 tbsp yogurt (1.5% fat)
- 1 pack of ready-made salad dressing mix of your choice

Prepare the tortellini in salted water according to the package instructions. Drain and let cool. Meanwhile, peel and deseed the cucumber, and cut into medium-sized cubes. Deseed and dice the bell pepper. Mix together the tortellini, bell pepper, cucumber, tomatoes, about 2-3 tablespoons of yogurt, and the salad dressing. Tip: Don’t cut the tomatoes, so the tortellini won’t get soggy.
