Tortellini salad

Ingredients for 4 servings:

  • 250 g fresh tortellini (with cheese or spinach and ricotta filling)
  • salt water
  • 200 g cherry tomatoes
  • 1 m.-sized cucumber(s)
  • 1 large bell pepper(s)
  • 3 tbsp yogurt (1.5% fat)
  • 1 pack of ready-made salad dressing mix of your choice

Working time approx. 15 minutes; Cooking/baking time approx. 2 minutes; Total time approx. 17 minutes

Prepare the tortellini in salted water according to the package instructions. Drain and let cool. Meanwhile, peel and deseed the cucumber, and cut into medium-sized cubes. Deseed and dice the bell pepper. Mix together the tortellini, bell pepper, cucumber, tomatoes, about 2-3 tablespoons of yogurt, and the salad dressing. Tip: Don’t cut the tomatoes, so the tortellini won’t get soggy.
