Zucchini with minced meat and rice filling, baked

Ingredients for 4 servings:

  • 2 large zucchini
  • 250 g rice
  • 1 egg(s)
  • 1 onion(s)
  • 3 tbsp breadcrumbs
  • salt and pepper
  • Paprika powder
  • 100 g cheese, grated Gouda
  • 1 tbsp mustard
  • 10 slice(s) smoked belly, thinly sliced
  • 200 ml sweet cream
  • 1 vegetable stock cube
  • 1 pack of sauce, cream sauce
  • 300 g minced meat, mixed

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

First, cook the rice. Peel, halve, and hollow out the zucchini so they look like little boats. Chop the onions and add them to the minced meat along with the egg, breadcrumbs, salt, pepper, and a tablespoon of mustard. Knead everything together. Mix the cooked rice with the minced meat and add it to the hollowed-out zucchini. Once all the zucchini are filled, top with the belly slices, sprinkle with grated Gouda cheese, and sprinkle thinly with paprika. Transfer everything to an ovenproof dish, add a little water, and bake at 200°C for about 30 minutes. Then pour the sweet cream over the baked zucchini, add the stock cube to the water in the dish, and bake at 200°C for another half hour. Place the cooked zucchini on a large plate or platter and thicken the sauce with the cream sauce packets. You don’t need any side dish as the rice is already mixed into the minced meat.
