Ingredients for 4 servings:
- 250 Kritharaki (rice shaped noodles)
- 2 bell peppers, red
- 1 cucumber(s)
- 1 piece(s) Gouda, cut into cubes
- 3 tbsp oil
- 1 tbsp herb vinegar
- 2 garlic cloves, finely diced
- salt and pepper
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 27 minutes
Cook the pasta in plenty of boiling salted water until al dente (about 12 minutes), drain, and toss with a little olive oil in a bowl. Dice the bell peppers and cucumber. Mix the bell peppers, cucumber, Gouda cheese pieces, and garlic with the rice noodles. Mix the oil, vinegar, salt, and pepper to make a dressing and toss it into the salad.
