Lentil chili con carne

Ingredients for 4 servings:

  • 300 g onion(s)
  • 2 cloves garlic
  • 500 g minced beef
  • 3 tbsp oil
  • 2 bell peppers, red and green, 200 g each
  • 250 g lentils
  • 1 can of tomatoes, peeled (800 g)
  • salt and pepper
  • chili powder
  • 150 g cheese, grated
  • 1 bunch of spring onions or chives
  • cumin
  • Oregano, dried

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Briefly brown the minced meat in a pan in 1 tablespoon of oil, season with salt and pepper, and remove from the pan. Sauté the finely chopped onions and garlic in the remaining oil. Add the bell peppers, cut into 1 cm cubes, and sauté for 4 minutes. Add the lentils (rinsed with water), fry for 1/2 minute, then deglaze with 1/2 cup water and the peeled tomatoes and their liquid. Add the spices and simmer for about 50 minutes with the lid slightly ajar over medium heat, stirring occasionally. Season to taste. Sprinkle with chopped spring onions or chives before serving. Grate cheese over the dish at the table.
