  • 1 small potato(s), raw
  • 3 spring onions
  • 1 tbsp flour (whole grain)
  • 4 tbsp mineral water
  • 1 pinch(s) of chili powder, or harissa
  • 2 eggs
  • 2 slice(s) cheese, aromatic, thinly sliced
  • Black pepper, freshly ground
  • Salt, from the mill
  • Olive oil, for frying

In a plate, mix the flour, chili, salt, pepper, and mineral water. Add the eggs and whisk well. Heat the olive oil in a pan. Add the raw grated potato and the thinly sliced ​​white part of the spring onion to the hot oil and fry for a few minutes on high, turning halfway through. Then add the egg mixture and lift the pan so that the egg mixture coats the entire pan. Reduce the heat to half power. It will take a few minutes for the mixture to set. In the meantime, finely chop the green parts of the spring onion and scatter them over the omelet, along with the cheese. Fold one half of the omelet over the other, cook for a few more minutes, and then serve.
