Ingredients for 4 servings:
- 8 eggs
- 1 bunch of basil
- 1 bunch of chives
- salt and pepper
- 4 tbsp crème fraîche
- some mineral water
- Fat, for frying
Instructions
Working time approx. 5 minutes; Total time approx. 5 minutes
Finely slice the basil and finely chop the chives. Crack the eggs into the herbs, season with salt and pepper. Fold in the crème fraîche. Add mineral water to make the eggs fluffy. Let them set in the hot oil, then break them up.
